Ingredients:
5-6 medium sized potatoes, peeled and diced
1 medium sized onion, diced
1 bunch of carrots, celery, leeks, parsley
15gms butter
1 cup of milk
500ml of chicken stock
Grated Cheese
Method:
1-Saute onions and all the soup vegetables in
butter Add the diced potatoes to it.
2-Add the chicken stock to it and let it boil
till all the vegetables are tender.
3-With a masher or a fork, mash all the potatoes
and add milk to it.
4-Let it simmer for a good 45 mins.
5-Add salt and pepper. Sprinkle cheese over it
