Ingredients:
12 kg fish
3 medium tomatoes
2 onions, roughly chopped
1/4 cup fresh lemon juice
2 tbsp. olive oil
1/4 bunch green coriander, chopped
1/4 bunch parsley, chopped
salt and pepper to taste
Method:
1. Boil fish and remove bones and cut into
small pieces.
Chop onion very finely and rub with salt and
wash under running water.
2.Cut tomatoes into small pieces. Mix all the
ingredients in a bowl including fish. Add lemon
juice, olive oil, salt and pepper and toss well.
Sprinkle green coriander and chopped parsley on
the top and serve on a platter
