Serves 6
Ingredients:
For Rice:
1 1/2 cups raw rice
1 onion sliced finely
2-3 bay leaves, crushed
2 tsp. red chili powder
1/2 tsp. turmeric
2 tsp. dhania (Coriander powder) (coriander) powder
1 tsp. cumin powder
2 medium tomatoes, chopped
2- 3 tbsp. methi (Fenugreek) leaves, chopped
2 tbsp. ghee (clarified butter)
Blend to a smooth paste:
1 small onion
2-3 garlic cloves
1tsp.ginger paste
1-2 cloves
1 stick cinnamon
1 cardamom pod
3-4 green chilies
Method:
1.Heat some oil and add the bay leaves.
2.When they turn color, add the sliced onions and
cook them till they turn translucent.
3.Now add the chopped tomato and methi (fenugreek)
leaves and the blended paste.
4.Cook till it forms a thick paste . Add the spices
and keep on cooking for a minute.
5.Add the rice and cook it for 3 minutes. Add salt
according to taste.
6.Take this off the fire, transfer to a
microwaveable dish, add 3 cups of water, close the
dish and heat in the microwave until the rice is
cooked.
Note: You can also add frozen green peas to this
dish.
