Serves: 3-4 Preparation time: A few hrs
Ingredients : Basmati Rice 2 cup
Boneless Chicken sliced 2 cup
Salt 1 Tea Spoons or (As per taste)
White Vinegar 2 Table Spoon
Red Tomato Medium (2) Chopped
Onion 1 Medium Chopped
Lemon 1 Sliced
Black Pepper grounded 1 Tea spoon
Green Chilli 2 sliced
Garlic 2 cloves crushed
Ginger crushed 1 Tea Spoon
Mint and coriander chopped 1 tea spoon each
White cumin 1 tea spoon
cinnamon 2 small sticks
large cardamom 1 no.
Kewera few drops for aroma
zarda rang ( yellow food color)
Oil 1/2 cup
Method 1- Boil the rice with salt and vinegar.
2-Heat the oil in a wok and put cumin , cinnamon and
cardamom stir it start to smell.
3-Add the chicken and fry till it become tender then
add lemon and onion.
4-when all the juices reduced add grounded black
pepper, salt to taste, ginger, garlic and chopped
tomatoes at the end and fry it well till the juices
reduce and oil separated.
5-Then add the fresh mint and coriander in to it.
6-After all this preparation before serving add the
boiled rice in it together with green chillies, 1/2
tea spoon of vinegar, few drops of kewera for aroma
and yellow food color (zarda rang) and keep lid on
it to absorb the aroma.
7-Mix it well and enjoy the special khatee biryani.
