Ingredients:
Tofu: 100 gms
Olive oil: 3 tb
Onion: 1
Bay leaves: 2
Short grain rice: 100 gms
Salt: 1 ts
Turmeric: 1 ts
Tomato purée: 2 ts
Water: 500 ml
Mushrooms: 4
Sweet potato: 1
Carrot: 1
Sweet corn: 75 gms
Black beans: 100 gms
The Steps:
Pre - Preparation:
1) Chop the onion, carrot and mushrooms.
2) Heat the water.
3) Cube the sweet potato.
4) Boil the black beans.
Preparation :
1) Sauté the tofu in a pan, set aside.
2) Heat the olive oil in a large frying pan.
3) Add the chopped onions and bay leaves and sauté.
4) Add the rice and mix together.
5) Add the salt, turmeric and tomato purée.
6) Add the water and allow it to come to the boil.
7) Add all the vegetables, beans and tofu, cover and
cook on a low heat until the rice is cooked.
