Ingredients:
Long grained white rice: 2 cups
Sugar: 2 cups
Ghee: 1 cup
Chironji: l/2 cup
Almonds: 25
Pistachios: 25
Cardamom powder: 1 ts
Nutmeg powder: 1/4 ts
Saffron: 1/2 ts
Milk: 4 cups
The Steps:
Pre - Preparation :
1) Coarsely chop the chironji and blanch and chop
the almonds.
2) Chop the pistachios and soak the saffron in 1 ts
milk.
Preparation :
1) Soak rice in water for 2 hrs and drain.
2) Heat ghee and add drained rice.
3) Add milk and cover and cook on a low fire
stirring occasionally but
gently so that the rice grains do not break.
4) As soon as the rice is cooked, add the cardamom
and nutmeg powders,
dry fruits, sugar and saffron. Mix well.
5) Bake in a moderately hot oven till each grain is
separate.
6) Serve hot as a sweet dish.

Mash the rice, add some more milk and condensed milk
and serve it as
kheer.
