Ingredients :
1 cup Basmati rice ( available in Indian
stores)
1/2 cup chopped spinach - preferably fresh , washed
5- 6 carrots - washed and diced into small pieces
1-1/2 cup water
1/2 tsp salt
2 tblsp vegetable oil
4 cloves
1/4 tsp cinnamon
1/4 tsp cumin seeds
Method :
1-Wash the rice under flowing water , to remove any
dust etc.
2-Keep a heavy and large skillet on heat and add 2
tblsp vegetable oil to it.
3-When the oil becomes hot, add cloves, cumin seeds
and cinnamon and fry for 1 minute.
4-Then add the chopped spinach and carrots and fry
for 2- 3 minutes until the spinach is cooked.
5-Now add the rice, water, salt and stir well.
6-Bring the palav to a full boil and then lower the
heat, cover with a close-fitting lid and cook for
about 20 - 25 minutes.
7-Turn off the heat and let the rice stand for 5
minutes.
8-Fluff lightly and transfer the palav to a serving
platter.
