Ingredients:
Chicken breast: 2 1/2 lbs
Black pepper: 2 ts
Turmeric: 1/2 ts
Cayenne pepper: 1/2 ts
Cumin: 2 ts
Ajwain seeds: 1/2 or 1/3 ts
Garlic: 2 cloves
Bright red paprika: 2
Salt: 1 1/2 tss
Vegetable oil: 3/8 cups
The Steps:
Pre - Preparation :
1) Skin and debone the chicken.
2) Grind the black pepper, cumin and turmeric.
Preparation :
1) Pre-heat oven to 350 degrees F.
2) Cut each chicken breast piece into thirds
lengthwise and then
crosswise into 3/4-inch to 1-inch segments.
3) Add black pepper, turmeric, cayenne, cumin,
ajwain, garlic,
paprika, salt and 1 tb of oil.
4) Mix well and set aside for 10 mins or longer.
5) Heat 2 tb oil in a wok or large non-stick pan
over very high heat.
6) When oil is very hot add chicken.
7) Stir-fry quickly until chicken pieces are
lightly browned or
turn opaque on outside.
8) Put in baking dish, cover loosely with
lightly oiled waxed paper
(which should sit inside dish and directly on
chicken) and bake
for 8-10 mins or until chicken pieces are cooked
through.
9) If not to be eaten immediately, remove
chicken pieces for dish
to prevent them from drying out.
