Ingredients:
Bitter gourds: 12
Salt: To taste
Coriander powder: 2 ts
Cumin powder: 2 ts
Turmeric powder: 3/4 ts
Dry mango powder: 1 1/2 tb
Red chilly powder: 3/4 tbsp
Garam masala powder: 1/2 tb
Fennel seeds: 3 1/2 tb
Oil: 8 tb
Large onion: 1
Sugar: 1 tb

Method:
1) Wash and scrape the bitter gourd
2) Wash and scrape the bitter gourds
3) Slit and remove seeds
4) Apply salt and keep aside for ½ hour
5) Dry roast all the masala powders separately
6) Dry roast the fennel seeds and grind coarsely
7) Mix all the powders together
8) Peel and mince the onions
9) Heat 1½ tbsp of oil and saute the onions till golden
10) Add the masala powders, salt and sugar
11) Wash the bitter gourds and wipe dry
12) Fill the masala mixture in the slit bitter gourds
13) Heat the remaining oil in a wide vessel
14) Neatly arrange the bitter gourds
15) Cover with a tight lid and cook over low heat till cooked
16) Uncover and fry the vegetables till lightly browned. Serve hot

Suggested Accompaniments: Rotis

Other Suggestions:
Cut the leftover Karelas into 1 inch pieces and add it in any tomato based gravy.
