Ingredients :
4dish spoon cooking oil ,
3/4 teas haldi ,
1teas each garlic n ginger paste,
1teas sugar

Method:
1-Peel and remove seeds from the gourd ,then
apply salt onto it leave for overnight or if not
possible after applying salt leave in the sun
covered with muslin for about an hour or two .
2-Cut onion and chillies into thin slices, wash
gourd with cold water to remove excess salt.
3-Then in 2 1/2 cup water boil gourd with imli for
5to 8 minutes .
4-Drain water and let them to cool a little .Then
press them in between hands to drain excess water.
5-Now take 2dish spoon oil and fry pieces of gourd
in it till little crispy.
6-Remove , then in the remaining oil fry onion till
tender n changes to pinkish now add garlic ginger
paste n all spices to it with gourd too stir for a
few minutes,
7-Lastly add sugar n sprinkle a little water so as
to have steam cover the pan for few minutes on very
slow heat till oil is visible .
ready to serve with chappties.
