Ingredients:
Boneless firm white fish
fillets: 750 gms
Lime juice: 1 tb
Turmeric: 1 ts
Ghee or butter: 60 gms
Onion: 1
Vindaloo paste: 1 tb
Tamarind pulp: 1 tb
Coconut milk: 1 1/2 cups
Green pepper: 1
The Steps: Pre - Preparation :
1) Cut the fish into 5 cm strips
and grind the turmeric.
2) Chop the onion and green
pepper and dissolve the tamarind
pulp in 3
tb water.
Preparation :
1) Sprinkle fish in a shallow
glass or ceramic dish with lime
juice
and turmeric.
2) Toss to combine and cover and
marinate at room temperature for
2 hrs
3) Melt ghee in a saucepan over
medium heat.
4) Add onion and cook, stirring,
for 5 mins or until onion is
golden.
5) Stir in paste. Cook,
stirring, for 10 mins or until
fragrant.
6) Add tamarind mixture and
coconut milk.
7) Bring to simmering and
simmer, stirring occasionally,
for 10 mins.
8) Add fish. Bring back to
simmering and simmer for 10 mins
longer.
9) Stir in green pepper. Cook
for 2 mins longer.
