Ingredients:
Cardamom seeds: 1 tb + 1 ts
Cinnamon sticks: 2 inches,
Whole cloves: 2 ts
Black peppercorns: 1 tb + 1 ts
Cumin seeds: 3 tb
Coriander seeds: 3 tb
The Steps:
Pre - Preparation :
Crush the cinnamon.
Preparation :
1) Put all spices in a heavy
skillet and dry-roast over
medium heat
5 to 10 mins, until browned,
stirring constantly.
2) Cool completely, then grind
to a fine powder in a coffee
grinder
or with a pestle and mortar.
3) Store in an airtight
container up to 2 months.
