Ingredients:
Chicken: 2 1/2 lb
Water
Celery tops
Butter or margarine: 3 tb
Tart apple: 1
Onion: 1
Curry powder: 1 tb (or more for
experienced palates)
Raisins: 1/3 cup
Chicken broth: 1 cup
Coca Cola: 1/2 cup
Flour: 3 1/2 tb
Undiluted evaporated: milk 1 cup
Salt: 1 ts
White pepper: 1/8 ts
Rice
The Steps:
Pre - Preparation :
1) Peel and dice the apple and the
onion thinly.
2) Cook the rice.
Preparation :
1) Rinse the chicken pieces.
2) In a pot of boiling salted
water, cook the chicken with a few
celery tops.
3) Cover and simmer for about 1 hr
or until fork-tender.
4) Drain and strain the broth,
reserve.
5) Bone the chicken and cut it into
1/2-inch pieces to measure about
2-1/2 cups.
6) In a skillet, melt the butter /
margarine.
7) Add the apple, onion, and curry
powder and saute for 5 mins,
blending well.
8) Stir in the raisins, 1 cup of
the reserved chicken broth, and the
Coca Cola.
9) In a bowl, mix flour with the
evaporated milk, stirring
until smooth.
10) Add with salt and white pepper
to the onion / apple mixture.
11) Stir and cook over low heat
until thick and creamy.
12) Taste for seasoning.
13) Add the chicken and turn into a
covered container to chill
overnight.
14) Re-heat in the top of a double
boiler over hot water and serve
on cooked rice with a selection of
condiments.
