Ingredients:
chicken - 600gms with bones ( will give approx 300
gms boneless chicken)
oil - 1 tsp
garlic paste - 1 tsp - paste or finely chopped
onion - 1 chopped fine
medium tomatoes - 4
salt - 1 1/2 - 2 tsp
red chilli powder - 1 tsp
tomato puree - 1/2 cup
finely chopped spinach ( paalak) - 6 cups
some dry bread crumb powder
Method:
1-Boil or steam chicken. Cool and shred into small
pieces.
2-Chop & Puree tomatoes in a mixer.
3-In a pan, add chopped onion, pureed tomatoes, 1
tsp salt, red chillies and tomato puree.
4-Give 2-3 boils .Add shredded chicken. Mix well.
5-Give a few boils till nearly dry. Heat 1 tsp oil
in a nonstick pan.
6-Add garlic and fry for 1-2 minutes. Add spinach,
3/4 tsp salt & 3/4 tsp pepper.
7-Cook in high heat till spinach is reduced and all
the water has evaporated.
8-Take a baking dish. Spread spinach at the bottom.
9-Pour prepared chicken & spread to form a layer on
top of spinach. Sprinkle bread crumbs on top.
10-Decorate with sliced tomato wedges & bake in a
preheated oven at 150.c for 20 minutes.
Note:
Instead of chicken, boiled mutton mince ( keema) or
fish can also be used.
